Ingredients

1.5 lbs chicken breast, cut into 1-inch cubes

1/4 cup honey

1/4 cup BBQ sauce (preferably a smoky variant)

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground black pepper

1 teaspoon salt

1/2 teaspoon cayenne pepper (optional, for heat)

1 bell pepper (red or yellow), cut into 1-inch pieces

1 red onion, cut into 1-inch wedges

Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes)

Instructions

Marinate the Chicken: In a large bowl, whisk together honey, BBQ sauce, soy sauce, apple cider vinegar, minced garlic, smoked paprika, black pepper, salt, and cayenne pepper (if using). Add the chicken cubes to the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes, ideally 2-4 hours for maximum flavor.

Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling. Preheat your grill or grill pan over medium-high heat.

Assemble the Skewers: Thread the marinated chicken cubes, bell pepper pieces, and onion wedges onto the skewers, alternating between chicken and veggies.

Grill the Skewers: Place the skewers on the preheated grill. Grill for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. Brush the skewers with any leftover marinade during the last few minutes of grilling for extra flavor and glaze.

Serve: Remove the skewers from the grill and let them rest for a couple of minutes. Serve warm, garnished with fresh herbs if desired, alongside extra BBQ sauce for dipping.
