1 pound boneless, skinless chicken breast, thinly sliced

1 tablespoon vegetable oil

2 cloves garlic, minced

1 inch piece of ginger, grated

2 cups mixed bell peppers (red, yellow, green), sliced

1 cup broccoli florets

1 cup snap peas

1/4 cup honey

1/4 cup soy sauce (low sodium recommended)

1 tablespoon rice vinegar

1 tablespoon cornstarch

2 tablespoons water

1 teaspoon sesame oil

Salt and pepper to taste

Sesame seeds and sliced green onions for garnish

Cooked rice or quinoa for serving

Prepare the sauce: In a small bowl, whisk together honey, soy sauce, rice vinegar, sesame oil, cornstarch, and water until smooth. Set aside.

    Cook the chicken: In a large skillet or wok, heat vegetable oil over medium-high heat. Add the sliced chicken and season with salt and pepper. Sauté for about 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the pan and set aside.

      Sauté vegetables: In the same skillet, add a bit more oil if needed. Add minced garlic and grated ginger, stirring for about 30 seconds until fragrant. Next, add the mixed bell peppers, broccoli, and snap peas. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.

        Combine chicken and sauce: Return the cooked chicken to the skillet, then pour the honey garlic sauce over the chicken and vegetables. Stir to coat everything evenly, and cook for an additional 2-3 minutes until the sauce thickens and everything is heated through.
