Ingredients
  

1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

1 cup bell peppers (red, yellow, and green), sliced

1 cup broccoli florets

1 cup snap peas

1 medium onion, thinly sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce (low-sodium preferred)

1/4 cup honey

1 tablespoon rice vinegar

2 tablespoons sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

2 tablespoons vegetable oil (for frying)

Sesame seeds, for garnish

Chopped green onions, for garnish

Cooked rice or noodles, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the soy sauce, honey, rice vinegar, minced garlic, and grated ginger. Add the chicken strips and marinate for about 15-20 minutes, allowing the flavors to infuse.

    Prepare the Vegetables: While the chicken marinates, wash and slice all the vegetables. This will make the cooking process seamless.

      Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the marinated chicken, reserving the marinade for later. Stir-fry the chicken for about 5-7 minutes until browned and cooked through. Remove the chicken from the pan and set aside.

        Stir-fry the Veggies: In the same pan, add the sesame oil and sauté the onion for 2 minutes until fragrant. Then add the bell peppers, broccoli, and snap peas. Stir-fry for 4-5 minutes until the vegetables are tender but still crisp.

          Combine Chicken and Sauce: Return the cooked chicken to the pan with the vegetables. Pour in the reserved marinade and bring it to a simmer. Add the cornstarch mixed with water to thicken the sauce, stirring constantly for about 1-2 minutes.

            Garnish and Serve: Once the sauce has thickened and everything is well-coated, remove from heat. Sprinkle with sesame seeds and garnish with chopped green onions. Serve hot over a bed of rice or noodles.
