8 oz (about 227g) fusilli or farfalle pasta

2 grilled chicken breasts, sliced (about 1 lb or 450g)

1 cup cherry tomatoes, halved

1 bell pepper, diced (any color)

¼ cup red onion, finely chopped

1 cup cucumber, diced

½ cup black olives, sliced

½ cup feta cheese, crumbled

¼ cup fresh parsley, chopped

Zest and juice of 1 large lemon

½ cup olive oil

1 tsp Dijon mustard

1 tsp honey

Salt and pepper to taste

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the lemon juice, lemon zest, olive oil, Dijon mustard, honey, salt, and pepper until well combined. Set aside.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, sliced grilled chicken, cherry tomatoes, bell pepper, red onion, cucumber, black olives, and feta cheese.

        Add Dressing: Pour the prepared dressing over the pasta and chicken mixture. Toss gently to ensure everything is evenly coated.

          Chill and Serve: Cover the salad with plastic wrap or a lid and refrigerate for at least 30 minutes before serving to allow the flavors to meld together. Prior to serving, garnish with fresh parsley.
