1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

Zest and juice of 1 large lemon

1 teaspoon red pepper flakes (adjust for spice)

1 tablespoon chopped fresh parsley (for garnish)

1 cup jasmine or basmati rice

2 cups vegetable or chicken broth (for cooking rice)

Cook the Rice: In a medium saucepan, bring 2 cups of vegetable or chicken broth to a boil. Stir in 1 cup of rice and a pinch of salt. Cover, reduce heat to low, and simmer for about 15 minutes, or until the rice is tender and the liquid is absorbed. Fluff rice with a fork and set aside.

    Prepare the Shrimp: In a large skillet over medium-high heat, melt 4 tablespoons of unsalted butter. Once melted and bubbling, add the minced garlic. Sauté for 1-2 minutes, until fragrant, but be careful not to let it brown.

      Add Shrimp: Add the shrimp to the skillet. Season with salt, pepper, and red pepper flakes. Cook for about 2-3 minutes on one side until they turn pink, then flip and cook for another 2-3 minutes on the other side.
