1 pound large shrimp, peeled and deveined

4 medium zucchinis, spiralized into zoodles

4 tablespoons unsalted butter, divided

4 tablespoons olive oil, divided

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1 cup cherry tomatoes, halved

Juice and zest of 1 large lemon

Salt and pepper, to taste

Fresh parsley, chopped for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Prepare the Zoodles: Using a spiralizer, transform the zucchinis into zoodles. Place them on a clean towel to absorb excess moisture while you prepare the shrimp.

    Cook the Shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter and 2 tablespoons of olive oil. Once hot, add the shrimp in a single layer. Season with salt and pepper. Cook for about 2-3 minutes on one side until they turn pink, then flip and cook for another 2 minutes. Remove shrimp from the skillet and set aside.

      Sauté Garlic: In the same skillet, add the remaining butter and olive oil. Once melted, add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute until fragrant, but be careful not to burn the garlic.

        Add Tomatoes and Zoodles: Stir in the cherry tomatoes and sauté for another 2-3 minutes until they start to soften. Then, add the zucchini noodles to the pan. Toss everything together and cook for an additional 2-3 minutes until the zoodles are just tender but still slightly crisp.

          Combine Ingredients: Return the cooked shrimp to the skillet. Add the lemon juice, zest, and mix well. Cook for an additional minute just to heat the shrimp through.

            Serve: Remove from heat. Garnish with freshly chopped parsley and, if desired, sprinkle with grated Parmesan cheese. Enjoy your zoodle scampi warm!
