Lemon Herb Couscous & Chicken Skillet

Ingredients
  

1 lb (450g) chicken breast, diced

1 cup couscous

1 1/4 cups low-sodium chicken broth

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 zucchini, diced

1 cup fresh spinach, chopped

1 lemon (zest and juice)

1 tsp dried oregano

1 tsp dried thyme

1/2 tsp red pepper flakes (optional)

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, for garnish

Instructions
 

Prepare the Couscous: In a medium saucepan, bring the chicken broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork. Set aside.

    Cook the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Season the diced chicken with salt and pepper. Add the chicken to the skillet and cook for about 5-7 minutes, or until browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the onion and garlic, and sauté until the onion becomes translucent (about 3 minutes). Then, add the red bell pepper and zucchini, and cook for an additional 5 minutes until they're tender.

        Combine Ingredients: Return the cooked chicken to the skillet, along with the chopped spinach. Pour in the lemon juice and zest, and sprinkle the oregano, thyme, and red pepper flakes (if using) over the mixture. Stir well to combine and let it cook for another 2 minutes until the spinach has wilted.

          Add Couscous: Gently fold in the cooked couscous, making sure all ingredients are well incorporated. Taste and adjust seasoning if necessary, adding more salt, pepper, or lemon juice as desired.
