2 ripe avocados

1 lime (zest and juice)

4 slices of whole grain or sourdough bread

1 tablespoon olive oil

1 small clove garlic, minced

1/4 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1/4 cup cherry tomatoes, halved

2 tablespoons fresh cilantro, chopped

1/4 cup cotija cheese or feta (optional)

A handful of pepitas (pumpkin seeds), toasted

Instructions
 

Prepare the Avocado Mixture:

    - Cut the avocados in half, remove the pit, and scoop the flesh into a bowl.

      - Add lime juice, lime zest, minced garlic, red pepper flakes, salt, and pepper to the bowl.

        - Mash the avocado mixture with a fork until smooth but still slightly chunky. Taste and adjust seasoning as needed.

          Toast the Bread:
