Lime Glazed Turkey

1 whole turkey (12-14 pounds), thawed

1 cup fresh lime juice (about 8-10 limes)

1/2 cup honey

1/2 cup olive oil

6 cloves garlic, minced

2 tablespoons fresh ginger, grated

1 tablespoon soy sauce

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

Zest of 4 limes

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Turkey: Preheat your oven to 325°F (165°C). Remove the turkey giblets and pat the turkey dry with paper towels. Place the turkey on a roasting rack in a large roasting pan.

    Make the Lime Glaze: In a medium saucepan over medium heat, combine the fresh lime juice, honey, olive oil, minced garlic, grated ginger, soy sauce, cumin, smoked paprika, salt, and black pepper. Bring the mixture to a simmer, stirring occasionally until the honey dissolves completely, about 5 minutes.

      Add Lime Zest: Remove the glaze from heat and stir in the lime zest. Set aside to cool slightly.

        Baste the Turkey: Using a basting brush, generously coat the entire turkey with the lime glaze. Reserve about 1/4 cup of the glaze for basting during roasting and serving.

          Roast the Turkey: Place the turkey in the preheated oven and roast for about 2.5 to 3 hours, or until the internal temperature at the thickest part of the thigh reaches 165°F (74°C). Baste the turkey every 30 minutes using the reserved glaze.

            Rest the Turkey: Once fully cooked, remove the turkey from the oven and let it rest for at least 20-30 minutes before carving. This helps to keep the meat juicy.

              Garnish and Serve: If desired, garnish with fresh cilantro for a pop of color. Serve the turkey with additional lime glaze on the side.
