Lime & Tofu Salad Bowl

Ingredients
  

1 block (14 oz) firm tofu, drained and pressed

2 tbsp cornstarch

2 tbsp olive oil

1/4 cup fresh lime juice (about 2 limes)

1 tbsp honey or agave syrup

1 tbsp soy sauce

1 tsp sesame oil

1 tsp garlic powder

1/2 tsp salt

1/2 tsp black pepper

4 cups mixed salad greens (spinach, arugula, kale)

1 cup cherry tomatoes, halved

1 cucumber, thinly sliced

1 avocado, diced

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

Crushed peanuts or sesame seeds for garnish

Instructions
 

Prepare the Tofu: Dice the pressed tofu into bite-sized cubes. In a bowl, toss the tofu with cornstarch, ensuring each piece is well-coated. This will help give it a crispy texture when cooked.

    Cook the Tofu: In a large skillet, heat olive oil over medium-high heat. Add the cornstarch-coated tofu and cook for about 10-15 minutes, flipping occasionally, until golden and crispy on all sides. Once done, remove from heat and set aside to cool slightly.

      Make the Dressing: In a small bowl, whisk together the fresh lime juice, honey (or agave syrup), soy sauce, sesame oil, garlic powder, salt, and black pepper until well combined.

        Assemble the Salad: In a large salad bowl, layer the mixed greens, followed by cherry tomatoes, cucumber, avocado, red onion, and cooked tofu.

          Dress the Salad: Drizzle the lime dressing over the salad and gently toss to combine, ensuring all ingredients are coated with the dressing.
