2 ripe mangoes, peeled and diced

1 cup coconut milk (full-fat for creaminess)

1/4 cup honey or maple syrup (adjust to taste)

1/4 cup chia seeds

1 teaspoon vanilla extract

Pinch of salt

Fresh mint leaves (for garnish, optional)

Instructions
 

Blend the Mango: In a blender, combine the diced mangoes, coconut milk, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until smooth and creamy. Taste the mixture and adjust sweetness if needed.

    Mix in Chia Seeds: Pour the blended mango mixture into a bowl. Stir in the chia seeds until well-combined. Allow the mixture to sit for about 10 minutes, stirring occasionally to prevent the chia seeds from clumping.

      Prepare the Popsicle Molds: While the chia pudding mixture is setting, prepare your popsicle molds. If using wooden sticks, place the sticks in the center of the molds.

        Fill the Molds: Carefully pour the mango-coconut-chia mixture into the popsicle molds, leaving a little space at the top for expansion during freezing.

          Insert Sticks and Freeze: Place the popsicle molds in the freezer and insert the sticks halfway through if you’re not using molds with built-in sticks. Freeze for at least 4-6 hours or until completely solid.

            Unmold and Serve: To remove the popsicles, run the molds under warm water for a few seconds. Gently pull the popsicles out. Serve immediately and garnish with fresh mint leaves if desired.
