Maple Almond Granola Clusters

2 cups rolled oats

1 cup sliced almonds

1/2 cup unsweetened shredded coconut

1/2 cup maple syrup

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 cup dried fruit (such as cranberries, apricots, or raisins) - optional

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, sliced almonds, shredded coconut, cinnamon, and salt. Mix well until all ingredients are evenly distributed.

      Combine Wet Ingredients: In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until fully combined.

        Combine Mixtures: Pour the wet mixture over the dry ingredient mix. Stir well until all the dry ingredients are coated evenly.

          Form Clusters: Using your hands, press the granola mixture firmly together in the bowl to create clusters. Spread the mixture out onto the prepared baking sheet in an even layer. Pat it down to consolidate the clusters.

            Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until golden brown. Stir halfway through baking to ensure even cooking, but be careful not to break apart the clusters too much.

              Cool and Add Dried Fruit: Once the granola is done, remove it from the oven and let it cool completely on the baking sheet. Once cool, break into clusters if needed and mix in any dried fruit you desire.

                Store: Transfer your granola clusters to an airtight container. They can be stored at room temperature for up to two weeks.
