Mini Apple Pies

Ingredients
  

2 cups all-purpose flour

1/2 teaspoon salt

1 teaspoon sugar

1 cup unsalted butter, chilled and cubed

6-8 tablespoons ice water

4 medium-sized apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1/2 cup brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 tablespoon lemon juice

1 tablespoon cornstarch

1 egg, beaten (for egg wash)

Extra sugar for sprinkling

Instructions
 

Prepare the Pie Crust:

    - In a large mixing bowl, combine the flour, salt, and sugar. Add the chilled, cubed butter and use a pastry cutter or your hands to work the butter into the flour until the mixture resembles coarse crumbs.

      - Gradually add the ice water, one tablespoon at a time, mixing just until the dough holds together. Divide the dough into two equal parts, shape them into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

        Make the Apple Filling:

          - In a large bowl, combine the diced apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss until the apples are well coated, and set aside for about 10 minutes to allow the flavors to meld.

            Preheat the Oven:

              - Preheat your oven to 375°F (190°C).

                Roll Out the Dough:

                  - On a floured surface, roll out one disk of dough to about 1/8 inch thick. Use a round cutter (approximately 4-5 inches in diameter) to cut circles. Gather scraps, re-roll, and cut additional circles until you have about 12.

                    Assemble the Mini Pies:

                      - Place your dough circles into a greased muffin tin, pressing gently to fit. Spoon about 1-2 tablespoons of the apple filling into each pie crust. Then, roll out the second disk of dough and cut out more circles to top the pies (you can also create heart or star shapes for a decorative touch). Wet the edges of the bottom crust with water, and gently press the top to seal.

                        - Brush each mini pie with the beaten egg, and sprinkle a little sugar on top for added sweetness and crunch.

                          Bake the Mini Pies:

                            - Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and the filling is bubbly. Allow to cool in the tin for 10 minutes before transferring to a wire rack.

                              Serve and Enjoy:

                                - Serve warm or at room temperature. They can be enjoyed on their own or paired with vanilla ice cream for a delightful treat!
