1 cup cooked and shredded chicken (rotisserie works great)

1 ripe avocado, mashed

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup diced red onion

1/4 cup chopped fresh cilantro

1 teaspoon garlic powder

1/2 teaspoon cumin

Salt and pepper to taste

10-12 egg roll wrappers

Oil for deep frying or cooking spray for baking

Sweet chili sauce or ponzu sauce for dipping (optional)

Instructions
 

Prepare the Filling: In a medium bowl, combine the shredded chicken, mashed avocado, cheese, red onion, cilantro, garlic powder, cumin, salt, and pepper. Mix until well incorporated.

    Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface, positioned like a diamond (point facing you). Place about 2 tablespoons of the filling in the center of the wrapper. Fold the bottom point up over the filling, then fold in the sides, and roll tightly away from you. Seal the top point with a dab of water. Repeat with remaining wrappers and filling.

      Cook the Egg Rolls:

        - For Deep Frying: Heat oil in a deep skillet to 350°F (175°C). Fry the egg rolls in batches for about 3-4 minutes, or until golden brown and crispy, turning occasionally. Remove and drain on paper towels.

          - For Baking: Preheat your oven to 425°F (220°C). Place the egg rolls on a baking sheet lined with parchment paper. Spray or brush the tops with oil. Bake for 15-20 minutes, flipping halfway, until golden and crispy.

            Serve with Dipping Sauce: Arrange the egg rolls on a platter and serve warm with your choice of dipping sauce, such as sweet chili or ponzu sauce.
