Mini Chicken Ranch Tater Cups

2 cups frozen tater tots

1 cup cooked, shredded chicken breast

1/2 cup ranch dressing

1 cup shredded cheddar cheese

1/2 cup diced green onions

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Tater Tots: In a large bowl, mix the frozen tater tots with garlic powder, paprika, salt, and pepper. Optionally, let them thaw slightly to make them easier to mold.

      Form Tater Cups: Spray a muffin tin with cooking spray. Take a small handful of tater tots and press them into the bottom and sides of each muffin cup to form small bowls. Make sure they're packed tightly.

        Bake Tater Cups: Place the muffin tin in the preheated oven and bake for about 20 minutes or until the tater cups are golden and crispy.

          Mix Chicken Filling: While the tater cups are baking, in a medium bowl, combine the shredded chicken, ranch dressing, half of the diced green onions, and half of the shredded cheddar cheese. Mix well to combine.

            Fill Tater Cups: Once the tater cups are done baking, remove from oven. Carefully add a generous scoop of the chicken mixture into each tater cup.

              Top with Cheese: Sprinkle the remaining shredded cheddar cheese on top of the filled tater cups.

                Final Bake: Return the muffin tin to the oven for an additional 10-12 minutes, or until the cheese is melted and bubbly.

                  Garnish and Serve: Remove from the oven and sprinkle the remaining diced green onions on top. Allow to cool for a couple of minutes before carefully removing the tater cups from the muffin tin.
