Ingredients

4 medium bell peppers (red, yellow, or green, tops cut off and seeds removed)

1 pound ground beef or Italian sausage

1 cup ricotta cheese

1 cup marinara sauce (plus extra for serving)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Filling: In a large skillet, over medium heat, cook the ground beef or sausage until browned. Drain any excess fat. Stir in the marinara sauce, Italian seasoning, garlic powder, salt, and pepper. Mix well and let it simmer for 5 minutes.

Make the Cheese Mixture: In a separate bowl, combine the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Season with a pinch of salt and pepper. Mix until well combined.

Stuff the Peppers: Place the prepared bell peppers in a baking dish. First, spoon a layer of the meat sauce into each pepper, filling them halfway. Next, add a layer of the ricotta cheese mixture, followed by another layer of the meat sauce. Finish by topping each pepper with the remaining mozzarella and Parmesan cheeses.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Let Cool & Serve: Remove the stuffed peppers from the oven and let them cool for a few minutes. Garnish with fresh basil leaves if desired, and serve with extra marinara sauce on the side.
