Mini Spaghetti Pie Muffins

8 oz spaghetti

2 large eggs

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 cup marinara sauce (plus extra for serving)

1 tsp Italian seasoning

1/2 tsp garlic powder

Salt and pepper, to taste

Fresh basil or parsley, for garnish (optional)

Instructions
 

Preheat Oven: Begin by preheating your oven to 375°F (190°C). Grease a muffin tin or line with muffin liners.

    Cook Spaghetti: In a large pot, bring salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Drain and set aside to cool slightly.

      Mix Ingredients: In a large mixing bowl, combine the cooked spaghetti, eggs, ricotta cheese, half of the mozzarella cheese, Parmesan cheese, marinara sauce, Italian seasoning, garlic powder, salt, and pepper. Mix thoroughly until the spaghetti is well-coated with the mixture.

        Fill Muffin Tin: Spoon the spaghetti mixture into each muffin cup, filling them about 3/4 full. Gently press down to make sure they hold together.

          Top with Cheese: Sprinkle the remaining mozzarella cheese over the tops of each muffin.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden and the cheese is bubbly.

              Cool and Serve: Allow the mini spaghetti muffins to cool in the pan for about 5 minutes before gently removing them. Serve with extra marinara sauce on the side and garnish with fresh basil or parsley if desired.
