Ingredients

2 cups all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

½ teaspoon salt

2 large eggs

1 ¾ cups milk

½ cup melted butter

Cooking spray or oil for the waffle maker

8 slices of your choice of deli meat (turkey, ham, chicken)

4 slices of cheese (cheddar, mozzarella, or your favorite)

1 medium avocado, sliced

Fresh spinach or arugula

Optional: Mustard or mayonnaise for spreading

Instructions

Prepare the Waffle Batter: In a large bowl, mix together the flour, sugar, baking powder, and salt. In a separate bowl, whisk the eggs and then add the milk and melted butter, mixing well. Gradually combine the wet ingredients with the dry, stirring until just combined (do not overmix).

Preheat the Waffle Maker: Preheat your waffle maker according to the manufacturer's instructions. Lightly spray or brush with oil to prevent sticking.

Cook the Waffles: Pour enough batter into the preheated waffle maker to cover the surface, usually about ½ cup, depending on your waffle maker's size. Close the lid and cook for about 3-5 minutes or until golden brown and crispy. Remove and repeat until all batter is used up.

Assemble the Mini Waffle Sandwiches: Take one waffle and start layering your sandwich. Begin with a slice of cheese, then add a piece of deli meat, a few slices of avocado, and a small handful of fresh greens. If desired, spread a thin layer of mustard or mayonnaise on the top waffle before closing the sandwich.

Cut & Pack: Use a sharp knife to cut each waffle sandwich into quarters or halves, depending on your preference. These can be enjoyed warm or can be packed for a fun lunch!

Storage Tip: If making these ahead of time, store them in an airtight container in the refrigerator for up to 3 days. Reheat in the toaster oven for a crispy finish!
