4 medium zucchinis

1 cup cherry tomatoes, halved

1 cup fresh spinach, chopped

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried Italian herbs (or mixed herbs)

Salt and pepper to taste

Fresh basil leaves, for garnish

Prepare Zucchinis: Slice the zucchinis in half lengthwise and scoop out a small portion of the flesh to create boats. Keep the scooped flesh aside to use later.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the chopped zucchini flesh, cherry tomatoes, and spinach. Season with salt, pepper, and dried Italian herbs. Cook for 3-5 minutes, until the vegetables are softened.

      Combine Cheese: Remove the skillet from heat and stir in the grated Parmesan and half of the shredded mozzarella cheese. Mix until the cheese is melted and the vegetables are well combined.

        Stuff Zucchini Boats: Place the zucchini halves in the skillet. Spoon the vegetable and cheese mixture evenly into each zucchini boat, packing it gently.

          Top with Cheese: Sprinkle the remaining mozzarella cheese over the stuffed zucchinis.

            Bake: Preheat your oven’s broiler. Place the skillet under the broiler for about 5-7 minutes, or until the cheese is bubbly and golden brown. Keep an eye on it to prevent burning.

              Serve: Remove from the oven, garnish with fresh basil leaves, and serve warm.
