Ingredients

1 cup almond flour

1 cup shredded unsweetened coconut

1/2 cup almond butter

1/4 cup honey or maple syrup (for a vegan option)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup dark chocolate chips (optional)

Additional shredded coconut for rolling (optional)

Instructions

Prepare Your Workspace: Start by gathering all your ingredients and a mixing bowl. If you’d like, line a small baking sheet with parchment paper for easy clean-up.

Mix Dry Ingredients: In the mixing bowl, combine the almond flour and the shredded unsweetened coconut. Stir until well mixed.

Add Wet Ingredients: Now, add in the almond butter, honey or maple syrup, vanilla extract, and sea salt to the dry mixture.

Combine Well: Use a spatula or your hands (which work best) to mix everything together until you achieve a sticky dough. If the mixture feels too crumbly, add a little more almond butter or honey.

Incorporate Chocolate Chips: If you’re using chocolate chips, fold them in at this step until they’re evenly distributed throughout the dough.

Shape the Balls: Take about a tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture, placing the formed balls on the prepared baking sheet.

Roll in Coconut (Optional): If you want to add an extra touch, roll each ball in additional shredded coconut to coat them lightly. This adds a beautiful finish and extra texture.

Chill: Place the tray in the refrigerator for about 30-60 minutes. This helps them firm up and makes them easier to handle.

Serve: Once chilled, enjoy these delightful no-bake almond coconut balls immediately, or store them in an airtight container in the fridge for up to a week.

Prep Time, Total Time, Servings: 15 minutes | 1 hour chilling | Makes about 15 balls
