Ingredients

1 ½ cups rolled oats

1 cup pitted dates, chopped

½ cup unsweetened shredded coconut

½ cup almond butter (or peanut butter)

1 cup dried mango slices, finely chopped

¼ cup honey or maple syrup

1 teaspoon vanilla extract

½ teaspoon sea salt

Optional: ¼ cup chopped nuts (almonds, cashews, or macadamia nuts) for added crunch

Instructions

Prepare the Base: In a food processor, combine the rolled oats, chopped dates, and shredded coconut. Pulse until the mixture resembles a coarse flour.

Add the Wet Ingredients: Add the almond butter, honey (or maple syrup), vanilla extract, and sea salt to the dry mixture. Pulse until everything is well combined, and a sticky dough forms.

Incorporate Mango: Gently fold in the chopped dried mango slices and optional nuts, ensuring they are evenly distributed throughout the mixture.

Form the Bars: Line an 8x8-inch (or similar-sized) baking dish with parchment paper. Transfer the mixture to the dish and press it down firmly using your hands or the back of a spatula to create an even layer.

Chill the Bars: Refrigerate for at least 2 hours or until firm. This step is crucial for the bars to hold together once cut.

Cut into Bars: Once the mixture is set, lift it out of the baking dish using the parchment paper. Place it on a cutting board and cut into bars or squares, as desired.

Store and Enjoy: Store the bars in an airtight container in the refrigerator for up to a week, or freeze for longer storage.
