Ingredients

1 cup rolled oats

1/2 cup almond flour (or any flour of your choice)

1/3 cup maple syrup

1/4 cup creamy almond butter (or peanut butter)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 cup chopped pecans or walnuts (optional)

1/4 cup raisins or dried cranberries (optional)

1/4 cup mini dark chocolate chips (optional)

Instructions

Prepare the Base: In a large mixing bowl, combine the rolled oats, almond flour, ground cinnamon, and salt. Stir until all dry ingredients are well mixed.

Add Wet Ingredients: In a separate bowl, whisk together the maple syrup, almond butter, and vanilla extract until smooth and creamy.

Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until fully combined. The mixture should be moist but also thick enough to hold together. If it’s too crumbly, add a splash of water or more maple syrup.

Mix in Optional Ingredients: Fold in any of the optional ingredients like chopped nuts, dried fruits, or chocolate chips for added texture and flavor.

Press into Pan: Line an 8x8 inch baking dish with parchment paper. Transfer the mixture to the dish and use a spatula or your hands to firmly press it down into an even layer. The more tightly you pack it, the better it will hold together.

Chill: Place the baking dish in the refrigerator for at least 2 hours to allow the energy squares to firm up.

Cut and Serve: Once chilled and set, lift the energy squares out of the dish using the parchment paper. Cut them into squares or bars.

Store: Store leftover squares in an airtight container in the fridge for up to a week or freeze for longer storage.

Prep Time: 15 minutes | Total Time: 2 hours 15 minutes | Servings: 12 squares
