1 lb (450g) boneless, skinless chicken breasts, diced

1 cup orzo pasta

2 cups fresh spinach, roughly chopped

1 medium onion, finely chopped

3 cloves garlic, minced

3 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté Chicken: In a large pot over medium heat, add olive oil. Season the diced chicken breasts with salt and pepper, then add them to the pot. Sauté for about 6-7 minutes, or until the chicken is cooked through and lightly browned. Remove the chicken from the pot and set aside.

    Cook Aromatics: In the same pot, add the chopped onion and cook for about 3-4 minutes, until translucent. Stir in the minced garlic and Italian seasoning, cooking for an additional minute until fragrant.

      Add Orzo and Broth: Pour in the orzo pasta and chicken broth, stirring to combine. Bring the mixture to a boil, then reduce heat to a simmer. Let it cook for about 10-12 minutes, stirring occasionally, until the orzo is al dente and the broth is mostly absorbed.

        Incorporate Cream and Cheese: Lower the heat and stir in the heavy cream and grated Parmesan cheese until creamy and smooth. Then, add back the cooked chicken and chopped spinach. Cook for an additional 2-3 minutes, or until the spinach is wilted and everything is heated through.
