8 oz (about 2 cups) fusilli or penne pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell peppers (red, yellow, or orange), diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra-virgin olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

Salt and pepper to taste

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and rinse under cold water to stop the cooking process. Allow to cool completely.

    Prepare the Vegetables: While the pasta is cooling, chop the cherry tomatoes, cucumber, bell peppers, and red onion.
