Ingredients

4 boneless, skinless chicken thighs

2 ripe peaches, pitted and sliced

1 medium onion, thinly sliced

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon olive oil

¼ cup chicken broth

2 tablespoons balsamic vinegar

1 teaspoon honey

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon smoked paprika

2 tablespoons fresh basil, chopped (for garnish)

Instructions

Prepare the Chicken: Season the chicken thighs with salt, black pepper, and smoked paprika on both sides.

Heat the Skillet: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken thighs. Sear until golden brown, about 5-6 minutes on each side. Remove the chicken from the skillet and set aside.

Sauté Vegetables: In the same skillet, add the sliced onion and sauté for about 3-4 minutes until they become translucent. Add the minced garlic and grated ginger, cooking for an additional minute until fragrant.

Cook the Peaches: Add the sliced peaches to the skillet, stirring gently for about 2-3 minutes until slightly softened.

Deglaze the Pan: Pour in the chicken broth and balsamic vinegar, scraping the bottom of the skillet to release any flavorful bits. Stir in the honey, mixing well.

Combine Chicken and Sauce: Return the seared chicken thighs to the skillet, nestling them among the peaches and onions. Cover and let simmer for 10 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).

Serve: Remove from heat, garnish with fresh basil, and serve hot over rice or with crusty bread to soak up the delicious sauce.
