Ingredients

1 cup rolled oats

1/2 cup natural peanut butter (creamy or crunchy as per preference)

1/4 cup honey or maple syrup (for a vegan option)

1/4 cup dark cocoa powder

1/4 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup chocolate chips (dark or dairy-free for vegan)

Optional toppings: shredded coconut, chopped nuts, or extra chocolate chips

Instructions

Prepare the Base: In a large mixing bowl, combine the rolled oats, cocoa powder, and salt. Stir to mix them evenly.

Mix Wet Ingredients: In a separate bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract. Mix until smooth and creamy.

Combine Mixtures: Pour the wet mixture into the dry oat mixture. Stir well until all the oats are coated and a sticky dough forms.

Add Chocolate Chips: Fold in the chocolate chips until evenly distributed throughout the mixture.

Shape Bites: Line an 8x8 inch baking dish with parchment paper. Using your hands or a small scoop, press the mixture firmly into the dish, spreading it evenly to create one flat layer.

Chill: Cover the dish with plastic wrap and refrigerate for about 2 hours, or until the fudge is set and firm to the touch.

Cut and Serve: Once chilled, lift the fudge out using the parchment paper. Cut into bite-sized squares or bars. Optionally, roll them in shredded coconut or sprinkle with chopped nuts for added texture.

Store: Keep the Peanut Butter Oat Fudge Bites in an airtight container in the refrigerator for up to a week, or freeze for longer storage.
