Ingredients

1 ½ cups all-purpose flour

1 cup canned pumpkin puree

½ cup milk (or a dairy-free alternative)

2 large eggs

2 tablespoons brown sugar

1 tablespoon baking powder

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground ginger

¼ teaspoon salt

1 teaspoon vanilla extract

½ cup maple syrup (for serving)

Whipped cream (for serving)

Optional: chopped pecans or walnuts for garnish

Instructions

Preheat the Waffle Maker: Plug in your waffle maker and set it to medium heat to allow it to preheat.

Mix Wet Ingredients: In a large mixing bowl, whisk together the pumpkin puree, milk, eggs, brown sugar, and vanilla extract until smooth.

Combine Dry Ingredients: In a separate bowl, sift together the flour, baking powder, cinnamon, nutmeg, ginger, and salt.

Combine Mixtures: Gradually mix the dry ingredients into the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are fine.

Cook the Waffles: Lightly grease the waffle maker with cooking spray or a brush of oil. Pour the recommended amount of batter into the preheated waffle maker (about ½ cup, depending on the size) and cook until golden brown and crispy, typically about 4-5 minutes. Repeat until the batter is gone.

Assemble the Sandwiches: Once the waffles are cooked, remove them from the waffle maker and allow them to cool slightly. Place one waffle on a plate, add your desired filling (like cream cheese, Nutella, or even turkey and cheese for a savory twist), and top with another waffle to create a sandwich.

Serve: Drizzle with maple syrup, add a dollop of whipped cream, and sprinkle chopped nuts if desired.

Enjoy: Cut the sandwich in half for easier handling and indulge in your delicious pumpkin waffle creation!
