4 boneless, skinless chicken breasts

1 cup roasted red peppers (jarred or homemade), chopped

1 cup mozzarella cheese, shredded

1 cup ricotta cheese

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

2 tablespoons olive oil

1/4 cup fresh parsley, chopped (for garnish)

1/2 teaspoon crushed red pepper flakes (optional, for a spicy kick)

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Baking Dish: Lightly grease a 9x13 inch baking dish with one tablespoon of olive oil.

      Sauté Garlic and Red Peppers: In a skillet over medium heat, add the remaining tablespoon of olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped roasted red peppers and cook for an additional 2-3 minutes. Season with salt, pepper, oregano, and basil. Remove from heat and let cool slightly.

        Mix the Ricotta: In a medium bowl, combine the ricotta cheese, half of the mozzarella cheese, and crushed red pepper flakes (if using). Mix well until smooth and creamy.
