4 large whole wheat tortillas

1 red bell pepper, sliced

1 zucchini, sliced

1 cup cherry tomatoes, halved

1 cup broccoli florets

3 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 cup hummus (store-bought or homemade)

1 cup baby spinach or arugula

1 avocado, sliced

Optional: feta cheese or vegan cheese, crumbled

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Veggies: In a large mixing bowl, combine the sliced bell pepper, zucchini, cherry tomatoes, and broccoli florets. Drizzle with olive oil, and season with salt, pepper, garlic powder, and smoked paprika. Toss to coat evenly.

      Roast the Vegetables: Spread the seasoned vegetables in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized, stirring halfway through.

        Warm the Tortillas: While the veggies are roasting, warm the whole wheat tortillas in a skillet over medium heat for about 30 seconds on each side, or until soft and pliable.

          Assemble the Wraps: Spread about ¼ cup of hummus evenly over each tortilla, covering most of the surface. On one side of each wrap, layer the roasted vegetables, a handful of spinach or arugula, sliced avocado, and feta cheese if desired.

            Roll the Wraps: Starting at the side with the fillings, tightly roll the tortilla away from you. Tuck in the ends as you go to prevent the filling from spilling out. Slice in half diagonally to serve.

              Serve and Enjoy: Arrange the wraps on a plate and serve immediately, perhaps with extra hummus for dipping!
