Salmon Lettuce Wraps with Watermelon Glaze

For the Salmon:

1 lb fresh salmon fillet, skin-on

1 tablespoon olive oil

Salt and black pepper, to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika

For the Watermelon Glaze:

2 cups fresh watermelon, diced

2 tablespoons honey (or maple syrup for a vegan option)

1 tablespoon apple cider vinegar

1 teaspoon fresh ginger, grated

1 tablespoon soy sauce (or tamari for gluten-free)

For the Wraps:

1 head of butter or romaine lettuce, leaves separated and washed

1 cup shredded carrots

1 red bell pepper, julienned

1 avocado, sliced

Fresh cilantro or mint leaves, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Watermelon Glaze: In a medium saucepan over medium heat, combine the diced watermelon, honey, apple cider vinegar, grated ginger, and soy sauce. Let it simmer for about 10 minutes, stirring occasionally, until the watermelon breaks down and the mixture thickens slightly. Remove from heat and let it cool.

    Cook the Salmon: Preheat your grill or stovetop skillet over medium-high heat. While it heats up, rub the salmon fillet with olive oil, then season with salt, black pepper, garlic powder, and smoked paprika. Place the salmon skin-side down on the grill or skillet.

      Grill the Salmon: Cook the salmon for about 4-5 minutes on each side, or until the internal temperature reaches 145°F (63°C) and the fish flakes easily with a fork. During the last couple of minutes of cooking, brush the watermelon glaze over the salmon for added flavor. Remove the salmon from heat and let it rest for a few minutes.

        Assemble the Wraps: While the salmon is resting, prepare the lettuce leaves as your wraps. Place a generous spoonful of shredded carrots and julienned bell pepper in the center of each lettuce leaf.

          Add Salmon and Avocado: Flake the cooked salmon into bite-sized pieces and place on top of the vegetable mixture in each lettuce leaf. Add a few slices of avocado on top.

            Drizzle & Garnish: Drizzle a little more of the watermelon glaze over the top of the salmon in each wrap. Garnish with fresh cilantro or mint leaves.

              Serve: Serve immediately with lime wedges on the side for a refreshing squeeze of juice.
