Ingredients

For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1/2 cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

3/4 cup buttermilk

For the Filling:

6 large eggs

1/4 cup whole milk

Salt and pepper to taste

6 slices of cooked bacon or sausage patties

1 cup baby spinach (optional)

Additional cheddar cheese for topping

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Make the Biscuit Dough:

      - In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper.

        - Add the cold, cubed butter into the flour mixture. Use a pastry cutter or your fingers to cut the butter until the mixture resembles coarse crumbs.

          - Stir in the shredded sharp cheddar cheese.

            - Gradually mix in the buttermilk until just combined. Be careful not to overmix.

              Shape and Bake Biscuits:

                - Turn the dough out onto a lightly floured surface. Gently pat it into a 1-inch thick rectangle.

                  - Use a biscuit cutter or a knife to cut out biscuits of your desired shape and size, and place them on the prepared baking sheet.

                    - Bake for 12-15 minutes, or until golden brown. Remove from the oven and allow to cool slightly.

                      Cook the Eggs:

                        - In a medium bowl, whisk together the eggs, milk, salt, and pepper.

                          - In a skillet over medium heat, add a little butter or oil and pour in the egg mixture. Cook gently, stirring occasionally, until the eggs are softly scrambled and just set.

                            Assemble the Sliders:

                              - Slice the baked biscuits in half horizontally.

                                - On each biscuit bottom, layer a piece of bacon or sausage, a generous spoonful of scrambled eggs, a handful of baby spinach (if using), and a sprinkle of additional cheddar cheese.

                                  - Place the biscuit tops on each assembled slider.

                                    Melt the Cheese (Optional):

                                      - To melt the cheese, place the assembled sliders back in the oven for an additional 3–5 minutes, until the cheese is bubbly.

Serve: Remove sliders from the oven, allow them to cool for a minute, and serve warm.
