For the shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon ground cumin

Salt and freshly cracked black pepper, to taste

8 small corn tortillas

For the cherry slaw:

2 cups red cabbage, finely shredded

1 cup fresh cherries, pitted and halved

1/4 cup fresh cilantro, chopped

1/4 cup red onion, finely sliced

Juice of 1 lime

2 tablespoons honey

Salt and pepper, to taste

For the additional toppings:

1 avocado, sliced

Lime wedges, for serving

Hot sauce (optional)

Instructions

Prepare the shrimp: In a medium bowl, combine the olive oil, smoked paprika, garlic powder, ground cumin, salt, and pepper. Add the shrimp and toss until evenly coated. Allow the shrimp to marinate for about 15 minutes.

Make the cherry slaw: In a large mixing bowl, combine the shredded red cabbage, halved cherries, chopped cilantro, and sliced red onion. In a small bowl, whisk together the lime juice, honey, salt, and pepper. Pour the dressing over the slaw mixture and toss until everything is well combined. Set aside to let the flavors meld.

Cook the shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for about 2-3 minutes on one side, then flip and cook for an additional 2-3 minutes until the shrimp are pink and opaque. Remove from heat.

Warm the tortillas: In a separate dry skillet or directly over a flame, warm the corn tortillas for about 30 seconds per side until pliable and slightly charred. Wrap them in a kitchen towel to keep warm.

Assemble the tacos: On each tortilla, place a few shrimp followed by a generous scoop of cherry slaw. Add slices of avocado on top and drizzle with hot sauce if desired.

Serve: Enjoy the shrimp tacos immediately with lime wedges on the side for squeezing over the top.
