1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon cumin

Salt and pepper, to taste

Juice of 1 lime

8 small corn or flour tortillas

For the Strawberry Slaw:

2 cups green cabbage, shredded

1 cup strawberries, hulled and sliced

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

3 tablespoons apple cider vinegar

2 tablespoons honey

Salt and pepper, to taste

For Garnish:

Lime wedges

Extra cilantro

Instructions

Prepare the Shrimp: In a mixing bowl, combine the shrimp with olive oil, chili powder, smoked paprika, garlic powder, cumin, lime juice, salt, and pepper. Toss until the shrimp are evenly coated. Let the mixture marinate for at least 15 minutes.

Make the Strawberry Slaw: While the shrimp is marinating, prepare the slaw. In a large bowl, combine shredded cabbage, sliced strawberries, red onion, and cilantro. In a separate small bowl, whisk together apple cider vinegar, honey, salt, and pepper. Pour this dressing over the slaw and toss gently to combine. Allow it to sit for about 10 minutes for the flavors to meld.

Cook the Shrimp: Heat a large skillet or grill pan over medium-high heat. Add the marinated shrimp in a single layer. Cook for 2-3 minutes on one side until lightly charred and pink, then flip and cook for another 1-2 minutes until fully cooked. Remove from heat.

Warm the Tortillas: In a dry skillet, warm the tortillas one at a time for about 30 seconds on each side until they are pliable. Keep them warm in a clean kitchen towel until ready to fill.

Assemble the Tacos: Place a generous amount of cooked shrimp on each tortilla, topped with a scoop of strawberry slaw.

Serve: Garnish with fresh cilantro and a wedge of lime on the side for squeezing over the tacos. Enjoy your zesty shrimp tacos with a pop of sweetness from the strawberry slaw!
