4 large flour tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup chopped bell peppers (any color)

1 cup spinach leaves, chopped

1/2 cup corn (canned or frozen, thawed)

1/2 teaspoon garlic powder

1/2 teaspoon cumin

Salt and pepper to taste

Olive oil or cooking spray (for cooking)

Optional: salsa, sour cream, or guacamole for serving

Instructions
 

Prep the Veggies: In a large mixing bowl, combine the chopped bell peppers, spinach, corn, garlic powder, cumin, salt, and pepper. Toss together until well mixed.

    Assemble the Quesadillas: Lay out two tortillas on a clean surface. Evenly distribute half of the cheese mixture (both cheddar and mozzarella) onto each tortilla. Next, add a generous scoop of the veggie mixture on top of the cheese, then sprinkle the remaining cheese on top of the veggies. Finally, place another tortilla on top of each.

      Cook the Quesadillas: Heat a large skillet over medium heat and add a little olive oil or spray with cooking spray. Once hot, carefully place a quesadilla in the skillet. Cook for about 3-4 minutes or until the bottom is golden brown and the cheese starts to melt. Carefully flip the quesadilla and cook for another 3-4 minutes on the other side.

        Slice and Serve: Remove from the skillet and let it cool for a minute before slicing into wedges. Repeat the cooking process with the remaining quesadilla. Serve warm with salsa, sour cream, or guacamole on the side.
