Ingredients

2 pounds fresh figs, stems removed and quartered

1 cup granulated sugar (adjust based on sweetness of figs)

1/4 cup fresh lemon juice (about 2 lemons)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon (optional)

Pinch of salt

Instructions

Prepare the Figs: Start by rinsing the fresh figs under cool water. Remove the stems and cut the figs into quarters. Place them in the slow cooker.

Combine Ingredients: Add the granulated sugar, lemon juice, vanilla extract, ground cinnamon (if using), and a pinch of salt to the figs in the slow cooker. Stir gently to combine, ensuring that the figs are evenly coated with the sugar and seasonings.

Cook: Place the lid on the slow cooker and set it to low heat. Let the fig mixture cook for 6 to 8 hours. Stir occasionally, if possible, to help break down the figs and ensure even cooking.

Check for Consistency: After 6 hours, check the consistency of the jam. If you prefer a smoother texture, use a potato masher or an immersion blender to break down the figs further. Continue to cook for an additional 1-2 hours on low heat until the jam reaches your desired thickness.

Jar the Jam: Once the fig jam has thickened to your liking, turn off the slow cooker and let the jam cool for a few minutes. Using sterilized jars, ladle the warm fig jam into the jars, leaving about 1/4 inch of headspace. Wipe the rims clean before sealing with lids.

Store: Allow the jars to cool to room temperature, then refrigerate. The homemade fig jam can be stored in the refrigerator for up to 3 weeks or in the freezer for up to a year.
