Southern-Style Macaroni and Cheese

8 ounces macaroni (cavatappi or elbow)

4 tablespoons unsalted butter

1/4 cup all-purpose flour

3 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and black pepper to taste

2 cups sharp cheddar cheese, shredded

1 cup Monterey Jack cheese, shredded

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook Pasta: In a large pot of salted boiling water, cook the macaroni according to package instructions until al dente. Drain and set aside.

    Make the Roux: In the same pot, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1-2 minutes until it forms a paste and is golden-brown, stirring constantly.

      Create the Cheese Sauce: Gradually whisk in the whole milk, ensuring no lumps remain. Continue to cook, stirring often, until the mixture thickens (~5-7 minutes).

        Season the Sauce: Stir in the garlic powder, onion powder, smoked paprika, salt, and black pepper. Then, slowly add the shredded sharp cheddar and Monterey Jack cheeses, stirring until melted and the sauce is smooth.

          Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce, stirring gently to combine until all pasta is well coated.

            Prepare for Baking (optional): If you want a crispy topping, preheat your oven to 350°F (175°C). Transfer the macaroni and cheese into a greased 9x13 inch baking dish. Sprinkle the grated Parmesan cheese evenly on top, followed by breadcrumbs if desired.

              Bake: Bake in the preheated oven for 25-30 minutes or until the top is golden and bubbly.

                Serve: Remove from oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
