4 large eggs

1 tablespoon olive oil

1 small onion, finely chopped

1 red bell pepper, diced

1 green chili, finely chopped (adjust for spice preference)

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

1/4 cup fresh cilantro, chopped

4 large whole wheat tortillas

1 avocado, sliced

1/2 cup shredded cheese (cheddar or pepper jack)

Hot sauce (optional, for serving)

Prepare the Egg Mixture: In a bowl, crack the eggs and whisk them until well blended. Season with a pinch of salt and pepper. Set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, sautéing for about 3-4 minutes until softened.

      Add Heat and Spice: Stir in the chopped green chili, smoked paprika, and ground cumin. Cook for another 1-2 minutes until fragrant.

        Cook the Eggs: Pour the whisked eggs into the skillet with the sautéed vegetables. Gently stir the mixture to scramble the eggs, cooking for about 4-5 minutes or until the eggs are fully cooked but still fluffy. Remove from heat.
