2 cups fresh or frozen mixed berries (blueberries, raspberries, and blackberries)

1 cup granulated sugar

1 tablespoon cornstarch

1 teaspoon chili powder (adjust for spice preference)

Zest and juice of 2 limes

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

½ cup unsalted butter, melted

1 cup buttermilk

½ teaspoon cayenne pepper (optional, for extra heat)

1 tablespoon coarse sugar (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.

    Prepare the Berry Filling: In a large mixing bowl, combine the mixed berries, ½ cup granulated sugar, cornstarch, chili powder, lime zest, lime juice, and vanilla extract. Toss gently until the berries are well coated. Pour the mixture into the bottom of the prepared baking dish.

      Make the Cobbler Batter: In another bowl, whisk together the flour, remaining sugar, baking powder, salt, and cayenne pepper (if using). Slowly mix in the melted butter and buttermilk until just combined. The batter will be lumpy, but do not overmix.

        Pour the Batter: Spoon the cobbler batter over the berry mixture in the baking dish. Do your best to cover the berries, but it’s okay if some are peeking through.
