Sticky Honey Soy Turkey Meatballs

1 lb (450g) ground turkey

1/2 cup breadcrumbs

1/4 cup finely chopped green onions

1/4 cup grated carrot

2 cloves garlic, minced

1 inch fresh ginger, grated

1 large egg

3 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey

1 teaspoon salt

1/2 teaspoon black pepper

Cooking oil (for frying)

For the sticky honey soy sauce:

1/4 cup honey

1/4 cup soy sauce

2 tablespoons rice vinegar

1 teaspoon cornstarch mixed with 1 tablespoon water

Sesame seeds (for garnish)

Additional chopped green onions (for garnish)

Instructions
 

Prepare the Meatball Mixture: In a large bowl, combine the ground turkey, breadcrumbs, chopped green onions, grated carrot, minced garlic, grated ginger, egg, soy sauce, sesame oil, honey, salt, and black pepper. Mix until well incorporated.

    Form the Meatballs: Using your hands, shape the mixture into small meatballs, about 1 inch in diameter. You should have around 20 meatballs. Place them on a baking sheet lined with parchment paper.

      Cook the Meatballs: Heat a large skillet over medium heat and add a drizzle of cooking oil. Once hot, add the meatballs in batches without overcrowding the pan. Cook for about 4-5 minutes on each side, or until golden brown and cooked through. Transfer them to a paper towel-lined plate to drain excess oil.

        Make the Sticky Sauce: In a small saucepan, combine the honey, soy sauce, and rice vinegar. Bring to a simmer over medium heat. Stir in the cornstarch-water mixture and cook for an additional 1-2 minutes until the sauce thickens. Remove from heat.

          Coat the Meatballs: Place the cooked meatballs in a large bowl and pour the sticky honey soy sauce over them. Gently toss until all meatballs are well-coated.

            Serve: Arrange the sticky honey soy turkey meatballs on a serving platter. Garnish with sesame seeds and additional chopped green onions. Serve warm with rice or in lettuce wraps for a fresh twist.
