Ingredients

2 ripe avocados

1 can (5 oz) tuna in water, drained

2 tablespoons plain Greek yogurt

1 tablespoon mayonnaise

1 tablespoon Dijon mustard

1 small celery stalk, finely chopped

1 small green onion, finely chopped

1 tablespoon capers, rinsed and chopped

Juice of 1/2 lemon

Salt and pepper, to taste

Paprika, for garnish

Fresh parsley, chopped, for garnish

Instructions

Prepare the Avocados: Cut the avocados in half lengthwise and remove the pits. Carefully scoop out a small portion of the flesh to create more room for the filling, and set aside in a bowl.

Make the Tuna Filling: In a mixing bowl, combine the drained tuna, Greek yogurt, mayonnaise, Dijon mustard, chopped celery, green onion, capers, and the juice of 1/2 lemon. Use a fork to mix everything thoroughly until well combined.

Season to Taste: Add salt and pepper to the tuna mixture based on your preference. If the mixture is too dry, you can add a bit more Greek yogurt or mayonnaise.

Incorporate Avocado: Finely chop the reserved avocado flesh and gently fold it into the tuna mixture. This will add a creaminess to the filling while maintaining the integrity of the avocado flavor.

Stuff the Avocado Halves: Generously spoon the tuna filling into each avocado half, packing it in well to create a nice mound on top.

Garnish: Sprinkle a dash of paprika over the stuffed avocados for color and an extra layer of flavor. Finish with a sprinkle of fresh parsley for a touch of freshness.

Serve: Transfer the stuffed avocado boats to a serving platter and enjoy immediately or chill them in the refrigerator for 15-20 minutes for a refreshing dish.
