1 pound sweet Italian sausage

1 medium onion, diced

2 cups fresh apples, peeled and diced (Granny Smith or Honeycrisp work well)

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

8 ounces refrigerated biscuit dough (cut into quarters)

4 large eggs

2 cups milk

1/4 cup maple syrup

1 cup shredded cheddar cheese

Salt and pepper to taste

Fresh parsley for garnish (optional)

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with non-stick spray.

    Cook the Sausage: In a large skillet over medium heat, cook the sweet Italian sausage until browned, breaking it apart with a spoon (about 5-7 minutes). Add the diced onion and cook for an additional 3-4 minutes until the onions are translucent.
