Ingredients

2 ripe bananas, mashed

1 cup rolled oats

1 cup all-purpose flour (or whole wheat flour for a healthier option)

1/2 cup brown sugar (lightly packed)

1/4 cup honey or maple syrup

1/2 cup milk (dairy or plant-based)

1/4 cup vegetable oil or melted coconut oil

1/2 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

Optional: 1/2 cup chopped walnuts or chocolate chips

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, honey (or maple syrup), milk, vegetable oil, and vanilla extract. Whisk until smooth.

Prepare Dry Ingredients: In another bowl, mix together the rolled oats, flour, brown sugar, baking powder, baking soda, cinnamon, and salt. Stir well to ensure even distribution of all dry ingredients.

Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.

Add Optional Ingredients: If using, fold in the chopped walnuts or chocolate chips to the batter for added texture and flavor.

Fill Muffin Tin: Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool and Serve: Once baked, remove the muffins from the oven. Allow them to cool in the tin for about 5 minutes before transferring to a wire rack to cool completely. Enjoy warm or at room temperature!
