1 ½ cups all-purpose flour

½ cup granulated sugar

¼ cup brown sugar, packed

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 large egg

½ cup milk (or almond milk for a dairy-free option)

¼ cup unsalted butter, melted

1 teaspoon vanilla extract

Zest of 1 lemon

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or spray with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In a separate bowl, beat the egg. Then add the milk, melted butter, vanilla extract, and lemon zest. Stir until combined and the mixture is smooth.

        Combine Mixtures: Gently fold the wet ingredients into the dry ingredients. Be cautious not to overmix; a few lumps are okay.

          Add Blueberries: Carefully fold in the blueberries until evenly distributed throughout the batter.
