Sweet Chili Peach Chicken Stir Fry

Ingredients
  

1 lb boneless, skinless chicken breasts, thinly sliced

2 ripe peaches, pitted and sliced into wedges

1 bell pepper (red or yellow), sliced

1 cup sugar snap peas, trimmed

1 medium onion, sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Fresh cilantro or basil leaves (for garnish)

Instructions
 

Marinate the Chicken: In a medium bowl, mix the sliced chicken with 1 tablespoon of soy sauce, ginger, and a pinch of salt and pepper. Let it marinate for at least 15 minutes while you prepare the other ingredients.

    Prepare the Sauce: In a small bowl, whisk together the sweet chili sauce, rice vinegar, and remaining 1 tablespoon of soy sauce. Set aside.

      Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken and stir-fry for about 5-7 minutes until golden and cooked through. Remove the chicken from the skillet and set aside.

        Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the onions and bell pepper, and sauté for 3-4 minutes until they start to soften. Then, add the sugar snap peas and garlic, cooking for another 2 minutes.

          Combine Chicken and Sauce: Return the cooked chicken to the skillet. Add the peach slices and pour the sweet chili sauce mixture over the top. Stir everything together gently and allow the peaches to cook slightly for about 2 minutes, just until warmed.

            Thicken the Sauce: If you prefer a thicker sauce, mix the cornstarch with 1 tablespoon of water and add it to the stir-fry, stirring well until the sauce thickens.

              Serve: Remove from heat, sprinkle with sesame seeds and fresh herbs, and serve immediately over steamed rice or quinoa.
