2 medium sweet potatoes, peeled and diced

1 tablespoon olive oil

1 teaspoon paprika

1/2 teaspoon cumin

Salt and pepper to taste

4 corn tostada shells

1 ripe avocado, mashed

1/2 cup black beans, rinsed and drained

1/4 cup crumbled feta cheese (optional)

1/4 cup fresh cilantro, chopped

1 lime, juiced

Jalapeño slices for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Roast the Sweet Potatoes: In a baking dish, toss the diced sweet potatoes with olive oil, paprika, cumin, salt, and pepper. Spread the sweet potatoes in a single layer and roast in the preheated oven for about 25-30 minutes, or until they are fork-tender and slightly caramelized, stirring once halfway through.

      Prepare the Avocado Mash: While the sweet potatoes are roasting, mash the ripe avocado in a bowl. Add the lime juice, a pinch of salt, and mix until creamy but still chunky.

        Assemble the Tostadas: Once the sweet potatoes are done roasting, it's time to assemble the tostadas. Place each corn tostada shell on a serving plate. Spread a generous layer of the avocado mash on each tostada.
