1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14 oz) diced tomatoes with green chilies

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (red or yellow), chopped

2 cups vegetable broth

1 tablespoon olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1 cup corn (fresh or frozen)

Fresh cilantro for garnish

Avocado slices (optional) for serving

Lime wedges for serving

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 5 minutes until they soften. Stir in the minced garlic and sauté for another 1-2 minutes until fragrant.
