4 bone-in pork chops (1 inch thick)

Salt and pepper, to taste

1 tablespoon olive oil

1 tablespoon butter

2 medium apples (such as Honeycrisp or Fuji), cored and sliced

1 medium onion, thinly sliced

2 cloves garlic, minced

1 teaspoon dried thyme

1 tablespoon Dijon mustard

¼ cup apple cider (or apple juice)

2 tablespoons maple syrup

½ cup low-sodium chicken broth

Fresh parsley, chopped (for garnish)

Prepare the Pork Chops: Season the pork chops with salt and pepper on both sides. Let them sit for about 15 minutes to absorb the flavors.

    Heat the Skillet: In a large skillet, heat the olive oil and butter over medium-high heat. Once the butter is melted and bubbling, add the pork chops and sear them for 4-5 minutes on each side, until they are browned and crispy. Remove the pork chops from the skillet and set them aside on a plate.

      Sauté the Apples and Onions: In the same skillet, add the sliced apples and onions. Sauté for about 5 minutes, stirring occasionally, until the apples begin to soften and the onions become translucent.

        Add Garlic and Thyme: Stir in the minced garlic and dried thyme, cooking for an additional 1-2 minutes until fragrant.

          Deglaze the Pan: Pour in the apple cider and scrape the brown bits from the bottom of the skillet. Add the Dijon mustard and maple syrup, mixing them well.

            Add Broth and Pork Chops: Return the pork chops to the skillet, nestling them among the apples and onions. Pour in the low-sodium chicken broth and bring the mixture to a gentle simmer.

              Cook Until Tender: Cover the skillet and let it simmer for about 10-15 minutes or until the pork chops are cooked through (internal temperature should reach 145°F) and the apples are tender.

                Serve: Once done, remove the skillet from heat. Garnish with chopped fresh parsley before serving. This dish pairs beautifully with a side of mashed potatoes, rice, or a simple green salad.
