Ingredients

1 sheet of puff pastry, thawed

2 ripe tomatoes, sliced

8 oz fresh mozzarella cheese, sliced

1 tablespoon olive oil

2 tablespoons fresh basil, chopped (plus extra for garnish)

1 teaspoon balsamic glaze (optional)

Salt and pepper, to taste

1 egg, beaten (for egg wash)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet to smoothen and slightly enlarge it. Cut the pastry into 4 equal squares.

Form the Edges: To create a border, gently fold the edges of each square inward about 0.5 inches, pressing down with a fork to seal.

Dock the Pastry: Using a fork, dock the center of each square (lightly pierce holes) to prevent it from puffing up too much during baking.

Prepare the Filling: Drizzle olive oil on each pastry square and sprinkle a pinch of salt and pepper. Layer the sliced tomatoes evenly in the center of each tart, followed by the fresh mozzarella slices.

Add Fresh Basil: Sprinkle the chopped fresh basil over the tomatoes and mozzarella, adding a burst of flavor to each tart.

Apply Egg Wash: Brush the edges of the puff pastry with the beaten egg to give it a beautiful golden-brown finish.

Bake: Place the tarts on a baking sheet lined with parchment paper and bake in the preheated oven for 15-20 minutes, or until the pastry is golden and puffed.

Finishing Touch: Once baked, remove from the oven and let cool for a few minutes. Drizzle with balsamic glaze (if using) and garnish with extra fresh basil.

Serve: Serve the tarts warm as an appetizer or light main dish alongside a fresh salad.
