Watermelon & Chicken Salad Bowl

2 cups cooked chicken breast, shredded or diced

3 cups seedless watermelon, cubed

1 cup cucumber, diced

1/2 red onion, thinly sliced

1 cup cherry tomatoes, halved

1/4 cup fresh mint leaves, chopped

1/4 cup fresh basil leaves, chopped

1/4 cup feta cheese, crumbled (optional)

3 tablespoons olive oil

2 tablespoons balsamic vinegar

Salt and pepper to taste

1 tablespoon honey or maple syrup (optional for sweetness)

Handful of arugula or mixed greens for serving

Cook the Chicken: If using raw chicken, season it with salt, pepper, and olive oil. Grill or bake it until fully cooked (about 20-25 minutes at 375°F), then let it cool and shred or dice.

    Prepare the Watermelon: While the chicken is cooking, cubing the watermelon into bite-sized pieces. Set aside in a large bowl.

      Chop the Vegetables: Dice the cucumber, slice the red onion, and halve the cherry tomatoes. Add these to the bowl with the watermelon.
