4 cups of fresh watermelon, cubed

1 cup of feta cheese, crumbled

1/2 cup of fresh mint leaves, chopped

1/4 cup of red onion, thinly sliced

2 tablespoons of extra virgin olive oil

1 tablespoon of balsamic vinegar

Salt and pepper to taste

Optional: 1/4 cup of toasted pumpkin seeds for added crunch

Instructions
 

Start by preparing the watermelon. Cut the watermelon into small cubes and place them in a large mixing bowl.

    Add the crumbled feta cheese to the bowl, gently mixing it with the watermelon to avoid breaking the cheese too much.

      Chop the fresh mint leaves and sprinkle them over the watermelon and feta mixture.

        Thinly slice the red onion and add it to the bowl. The red onion adds a beautiful color and a slight crunch.
